Seasoned Black Beans

This recipe is an add-on to a variety of dishes as a source of protein and fiber.

Ingredients:

  • 1/2 shallot
  • 1 can black beans, we use low sodium/no salt added
  • 1/2 tbsp dried basil
  • 1/2 tbsp dried oregano
  • 2-3 dried bay leaves
  • olive oil
  • 2-3 cloves garlic, minced

Directions:

  1. Finely chop the shallot and add it to a small saucepan with olive oil (enough to coat the bottom) and minced garlic.
  2. Add the dried seasonings to the saucepan once the shallot and garlic are fragrant.
  3. While the shallot, garlic, and seasonings are over heat, drain and rinse the black beans. Add them to the saucepan and add enough water to cover the beans. Cook that on low until the water evaporates, usually an hour.
