Breakfast Bagels

Being a Jersey girl at heart means I love bagels. I just can’t get enough of them! I’m eventually going to learn to make my own, but for now, I have some still in my freezer that I’m eating slowly.

During the last week of December 2025, I decided I wanted to start eating better and I didn’t want to wait until the new year. I woke up one morning and walked into the kitchen, got myself a cup of coffee and got out a frying pan to make some bacon and eggs.

I’ve made a variety of bagels the last week or so and this post is for all of them!

Ingredients:

  • bagel of your choice
  • 1-2 eggs
  • 2 pieces of bacon
  • slice of your favorite cheese, mine is muenster
  • butter
  • grape jelly
  • salt and pepper

Directions:

  1. Cook the bacon according to package directions. I cooked this bacon on the stove in a frying pan and then I cooked the eggs in the same frying pan using the bacon grease.
  2. While the bacon is cooking, toast the bagel. I ate this as an open faced sandwich, so I put butter and jelly on half the bagel.
    • bonus step: I put cheese on half of this bagel; I butter the bagel, place the cheese over the butter, and put it under the broiler to melt for a few minutes
  3. Once the bacon is done cooking, place on a paper towel lined plate and cook the egg(s) how you like them. I’m a huge fan of over easy eggs, so that’s how I made mine!
  4. Once everything is ready, assemble all ingredients and enjoy!

Ingredients:

  • 1/2 bagel of your choice
  • cottage cheese
  • hot honey
  • 1 egg
  • fresh scallions

Directions:

  1. Toast the bagel and cook the egg to your liking. Again, I love an over easy egg!
  2. Once those are both done cooking, assemble! I put the cottage cheese first, then the hot honey drizzle, then the egg, and top it off with fresh scallions.

This is just half a bagel with regular, whipped cream cheese and fresh fruit!
