This is a newer thing we’ve been doing with sweet potatoes. If you can’t tell by now, I LOVE sweet potatoes, so anytime I can incorporate them into a meal, I do. If you’d prefer to use different seasonings, feel free to swap them for seasonings you love 😊
Ingredients:
- 1-2 sweet potatoes, cubed
- olive oil
- salt
- black pepper
- paprika
- garlic powder
- hot honey or wildflower honey
Directions:
- Preheat the oven to 400ºF.
- While the oven is preheating, wash and cube the sweet potatoes to desired size. Sometimes we cube them very small, but the last couple times we’ve done this, we’ve just cut the sweet potato in half (like a hamburger, not longways), and then we cut those halves into quarters. Depending on the size of the potato, it might need to be cut smaller!
- Once cubed to desired size, put the pieces in a bowl and coat with some olive oil, salt, pepper, paprika, and garlic powder, all to taste. We usually do about 2 tsp of each.
- Bake in the oven at 400ºF for 25-30 minutes, or until outside is golden brown and a bit crispy.
- Once plated, drizzle with some (hot) honey as desired and enjoy!
