Ricotta toast is something that’s so versatile and it’s also SO delicious! I usually like to use fruits that are in season, so for this one, I used figs and peaches.

Ingredients:
- 2 slices bread of your choice, I chose a rustic Italian round loaf
- fresh ricotta cheese, I used probably about 1/4 cup on each slice
- agave, maple syrup, hot honey, to taste
- sliced fresh fruit, i.e. figs, peaches
Directions:
- Toast the bread to your desired level.
- While the bread is toasting, slice up your fresh fruit.
- Once bread is toasted, place on a plate and spread ricotta cheese on top. I like to then immediately put the fresh fruit on top and drizzle with hot honey and/or agave.
This recipe is so simple, yet so delicious, and it can be prepared any way you’d like! I’ve tried drizzling the agave/hot honey before putting the fruit on top, but I like it better when everything has that drizzle on it.
