Spring Rolls

Spring rolls… something I never thought I’d try, but honestly I’m wondering why didn’t try them sooner! This is such a simple recipe when you don’t want to cook a meal, but still want to eat something with some protein and veggies.

Ingredients:
  • 1 mango, sliced into thin strips
  • 1 avocado, sliced into thin strips
  • 1 large carrot, sliced into thin strips
  • 1 English cucumber, sliced
  • 1 bunch fresh cilantro
  • 1 bunch fresh basil
  • 1 bunch fresh mint
  • 1 can tuna, or substitute with cooked shrimp, chicken, or protein of your choice
  • 1 package spring roll wrappers (I only make 2 at a time)
  • Vermicelli noodles, optional
  • Seaweed snacks, optional
For the peanut sauce:
  • 3/4 cup sweet chili sauce
  • 1/3 cup peanut butter , smooth or crunchy (I prefer smooth)
  • 1/2 teaspoon low sodium soy sauce, or coconut aminos
  • 1/2 teaspoon hoisin sauce
Directions:
  1. Cook the vermicelli noodles according to package directions and then drain and rinse with cool water. Set aside.
  2. While the water is boiling and the noodles are cooking, slice all the veggies/fruits and make the peanut sauce.
    • To make the peanut sauce, add all ingredients to a blender or food processor and blend until smooth.
  3. If you’re using canned tuna like me, make it into spicy tuna. I also like to add some seaweed snacks to this.
  4. Take a spring roll wrapper and wet it so that it’s firm, but foldable. The easiest way to do this is by putting some water in a pie dish or on a plate with edges big enough for the entire wrapper to fit flat. Leave it in water for about 10-15 seconds.
  5. Lay it on a plate or cutting board and add your ingredients.
    ***It’s easiest to add the ingredients so that they are horizontal***
    I’d suggest about 2 pieces of each veggie/fruit you have sliced, as well as 2 leaves of cilantro, basil, and mint. Add your spicy tuna (or protein of your choice) on top of the herbs.
  6. Once your ingredients are added, fold over the left and right sides of the rice paper wrapper so they are covering the edges of the ingredients. Then tightly fold over the side closest to you and roll like a burrito.
  7. If you don’t like spring roll wrappers, you can also make this into a spring roll bowl!
