This salad is something my mom used to make all the time growing up and over the years, I’ve seen different versions of it at restaurants. Today I’m going to share my favorite way to eat this salad.
It’s so simple, you’ll wonder why you haven’t been making it all your life!
Ingredients:
- 1 5oz package spring mix or romaine
- 1/3 cup dried cranberries
- 1/4 cup crumbled feta cheese
- 1 apple, diced
- 1/4 cup roughly chopped pecans
- 1/2 onion, sliced
- creamy balsamic dressing
- Optional: 1/2 cucumber and 1 avocado, both sliced
Directions:
- Wash the spring mix and dry as best you can. If you have a salad spinner, that’ll do the trick!
- Add the spring mix to a salad bowl and set aside.
- Slice the apple, onion, and cucumber and avocado, if using, and add those to the bowl with the spring mix.
- Pro tip: soak the onions in an ice bath to alleviate that bite to them if onions are too strong.
- Roughly chop the pecans to desired size. I typically chop them so they’re in thirds without being too precise. Add those to the bowl.
- Sprinkle the crumbled feta over the salad.
- I make the creamy balsamic dressing myself. You can either add the dressing to the salad bowl or keep it on the side for serving. Enjoy!
