We LOVE nachos. We’ve created a bunch of variations of this recipe, but the one that stuck the most is this one.
Ingredients:
- corn tortilla chips (we use Tostitos)
- white queso (we use the Tostitos brand)
- chopped red or yellow onion
- sliced black olives
- sliced cherry tomatoes
- 1 diced avocado
- 1 diced mango
- sour cream
Directions:
- Preheat the oven to 400º F and slice your onion, tomatoes, and olives (if not already pre-sliced).
- While oven is preheating, put a layer of chips along a baking sheet of your desired size (we use a medium size baking sheet) and top with white queso, chopped onion, sliced black olives, and sliced cherry tomatoes. All of these ingredients can be whatever measurements you’d like! Let your soul tell you when it’s enough LOL
- Bake for about 10 minutes, or until chips are golden brown.
- While that’s in the oven, slice the avocado and mango.
- Once chips are browned and it’s heated through, remove from oven and top with fresh avocado and mango and dollop sour cream (again, however much you’d like!) and enjoy 🙂
This is our favorite way to enjoy nachos, but in the past, we’ve also used black beans, mushrooms, ground tofu, jalapeños… the list goes on. You can totally customize this recipe to include your favorite nacho toppings and don’t forget to tag me in your recipes!
