Roasted & Stuffed Delicata Squash

This recipe was honestly so simple to make because I had already made the quinoa salad and I needed to use up the chicken sausage before it went bad so I crafted this concoction.

  • 1 delicata squash, halved long ways
  • 1 package chicken sausage, any flavor
  • 1 recipe Quinoa Salad
  • olive oil
  • salt and pepper, to taste
  1. Before doing anything else, make the quinoa salad recipe, or just plain quinoa, according to the packet instructions. Then continue with this recipe.
  2. Preheat oven to 400oF
  3. While oven is preheating, slice the squash down the middle long ways and remove seeds. I lay it on it’s side and slice from stem to bottom with a sharp knife.
    ***Please be careful with this step!
  4. Put squash halves skin side down on a baking sheet and season with olive oil, salt, and pepper and then flip squash so the skin side is facing up. Using a fork, poke holes in the skin to allow venting while cooking and, again, season skin side with olive oil, salt, and pepper.
  5. Once oven is preheated, place squash in oven and cook for about 15 minutes, depending on the size. The delicata squash I’ve been finding at my grocery store has been on the small side, so you want to be sure you aren’t over cooking them. You want the squash to be golden brown on the bottoms, and then you’ll want to flip them and roast for another 5 minutes or so.
  6. While the squash is cooking, make the chicken sausage according to the packet directions. I love the brand al fresco and I usually get the sweet apple flavor. I like to cut it into bite sized pieces and cook it in a frying pan with some olive oil and Grill Mates Smokehouse Maple seasoning and I’ll cook it until it’s browned. It comes already fully cooked, so you really only need to worry about heating it all the way through.
  7. Once everything is cooked, carefully place the cooked delicata squash on a plate, spoon in some quinoa salad, and top with sliced chicken sausage. The quinoa salad recipe also has a dressing that’s used, but I also love Chick-fil-A sauce, so I use that on the side, as well.
