I found this recipe one day on Instagram and I’ve made it twice in the last week. It’s delicious and can be made however you prefer, but this is the recipe I follow:
- 1 piece salmon
- 1 pack imitation crab, shredded
- mayo, preferably kewpie, but regular mayo will work
- sriracha, to taste
- salt and pepper, to taste
- garlic powder, to taste
- 1 cup cooked white rice
- 1 tsp rice vinegar
- 1-2 nori sheets
- 1 avocado
- 1/4 cup chopped scallions
- sesame seeds, for garnish
- Preheat oven to 400oF.
- Cook white rice according to packet instructions. Once cooked, add rice vinegar and stir well to combine.
- While rice is cooking, season salmon with salt, pepper, garlic powder, and olive oil and rub it in. Air fry seasoned salmon at 400oF for about 10 minutes, or until cooked all the way through.
- In medium bowl, shred imitation crab.
- In another bowl, combine mayo and sriracha to make spicy mayo mixture. I use about 1/4 cup mayo and about 1/4 cup sriracha, but if you don’t want it too spicy, use less sriracha.
- Add salmon to shredded imitation crab, while also shredding the salmon. Combine with spicy mayo mixture and stir until evenly coated.
- Put rice into bottom of a casserole dish and make flat. Add nori sheets, either whole or shredded, over the rice. Top that with salmon and crab mixture. Bake for about 20 minutes, or until completely heated through.
- Garnish with scallions, avocado, spicy mayo, more sriracha, and sesame seeds. Serve with nori sheets, or by itself.
